One of the best substitutes for tomatoes is red bell pepper. Simply remove the seeds and blend the pepper into a paste before adding it to your curry. Red bell peppers are naturally sweet rather than bitter and provide a rich color and thickness similar to tomatoes.

Olives can also be used to enhance the flavor of various dishes. While they do not replicate the taste of tomatoes, they add a distinctive richness and help improve the overall texture of the meal.
